Really the only thing you can customize on a cruise is: type of cabin and location. The rest you will pay extra for: spa treatments, specialty restaurants, and shore excursions. Scheduled events and entertainment can not be customized...but you can choose to attend or skip it. Their is enough going everyday and night, a lot of entertainment overlaps so the show rooms are not overcrowded, you should not be bored. Just figure out your daily schedule from the ships next days activities, from the program left in you stateroom nightly.
